MACADAMIA NUT PIE


Needed:

  1. One . . . . . nine inch pie crust brushed with egg white
  2. Four . . . . . . eggs, beaten
  3. Five. . . . . . Tablespoons of melted butter
  4. Two . . . . . . teaspoons of vanilla
  5. 2/3 . . . . . cup sugar
  6. 1/2 . . . . . teaspoon salt
  7. 1/2 . . . . . teaspoon cinnamon
  8. 1 1/2 . . . . Tablespoons flour
  9. 1 1/2 . . . . cup light corn syrup
  10. Two . . . . . . cups chopped macadamia nuts

    Instructions:
    Mix together the salt, cinnamon and flour .. set aside. In a bowl beat together the eggs, butter, vanilla and sugar. Add the spice and flour mixture. Add the corn syrup and mix well. Stir in the macadamia nuts and pour into the pie shell brushed with egg whites.

    Bake at 350 degrees for 45 minutes or until firm

    Serving suggestions:
    Serve warm with a scoop of vanilla ice cream.


    AUNT BLANCHE'S APPLE PIE (sugar-free)


    Peel and slice "Delicious" apples to fill 1 quart microwave dish. Add 1 Tablespoon water. Cover. Microwave on high 6 minutes. Mix 6 oz. of frozen "Seneca (brandname) Apple Juice. Sprinkle salt, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 5 teaspoons corn starch to apples. Microwave 3 minutes uncovered on high. Add 1 Tablespoon lemon juice. Put filling in pie crust.

    Add 1 Tablespoon butter.

    OIL PIE CRUST


    1 3/4 . . . . cups flour
    1/2 . . . . . teaspoon salt (or to taste)
    1/2 . . . . . cup "West's" (brand name) Canola Oil
    1/4 . . . . . cup water

    Roll between wax paper.
    Bake at 425 degrees for 20 or 25 minutes or until browned.
